1. Raw Balls

Ingredients:

  • 2 dl (about 0.8 cups) rolled oats
  • 1 dl (about 0.4 cups) shredded coconut, plus extra for rolling
  • 2 tbsp cocoa powder
  • 1 dl (about 0.4 cups) soft dates, pitted
  • 1 dl (about 0.4 cups) water or choice of milk

Instructions:

  • Combine all ingredients in a food processor and blend until a moldable dough forms.
  • Roll the mixture into small balls with your hands.
  • Roll the balls in shredded coconut for an extra layer of sweetness and texture.
  • Refrigerate for at least one hour before serving to allow them to set.

2. Heart-shaped Popsicles

Approx. 6 popsicles

Ingredients:

  • 1 dl (about 0.4 cups) frozen strawberries
  • 1 dl (about 0.4 cups) coconut cream
  • 0.5 banana
  • 1/4 avocado
  • Juice from 0.5 lime

Instructions:

  • Blend all ingredients.
  • Pour into popsicle molds.
  • Freeze for at least 3 hours.

3. Banana Bread with White Chocolate Mousse

8-10 slices

Banana Bread:

  • 3 ripe bananas
  • 2 dl (about 0.8 cups) all-purpose flour
  • 1/2 dl (about 0.2 cups) sugar
  • 1 tsp baking powder
  • 1 egg
  • 50 g (about 1.8 oz) melted butter

White Chocolate Mousse:

  • 1 ripe avocado
  • 100 g (about 3.5 oz) white chocolate
  • 2 tbsp honey or agave syrup
  • 1 tsp vanilla extract
  • A pinch of salt (optional to balance the sweetness)

Instructions:

  • Preheat the oven to 175°C (about 347°F). Mash the bananas and mix with the egg and melted butter. Add the dry ingredients and stir.
  • Pour the batter into a greased pan and bake for 25-30 minutes. Let cool.
  • For the mousse, blend all ingredients in a blender until smooth. Spread the mousse over the cooled banana bread.
  • Cut the bread into pieces and serve with a dollop of mousse on top.

4. Keep it simple! Biscuits & Berries

Ingredients:

  • Your favorite biscuits 
  • Fresh berries (e.g., strawberries, blueberries, raspberries)
  • Dark or white chocolate for melting (optional)

Instructions:

  • Arrange the biscuits on a plate.
  • Top each biscuit with a selection of fresh berries.
  • If desired, melt the chocolate and drizzle over the biscuits and berries for an extra festive touch.
